Azores Style Fish Soup – Sopa de Peixe dos Açores

I couldn’t find any recipes online that matched the delicious rich oily fish soup that I ate on Pico and Faial islands in the Azores. Finally I found a recipe for “Sopa de Peixe da Terceira” in a recipe card collection called “Saberes e Sabores dos Açores”, the principal I have made to the recipe is not including potato, as the soups I tried didn’t include it.

Serves 6 as a starter

Ingredients

600g  White Fish // 1 Bay Leaf // 1 Onion // 2 Garlic Cloves // 2 tablespoons Tomato Paste // 1 cap-full Red Wine Vinegar // bunch Parsley // 2 tablespoons Olive Oil

  1. Cut the Fish into large chunks, cover with water, then boil with the Bay and Salt until cooked through (5 minutes or so), take out the Fish and reserve the broth.
  2. Shred the Fish.
  3. Very finely chop the Onion and Garlic, fry in Olive Oil for 5 minutes, add the Tomato Paste and fry 1 minute more, then add the Fish Broth.
  4. Finely chop the Parsley and add to the Broth along with the vinegar.
  5. Simmer the Broth for 5 minutes and season to taste.
  6. Add the Fish, add extra water if needed and a final splash of Olive Oil, heat through.

Serve with crusty bread, Enjoy!
