Tahini

This is to accompany the Falafel recipe, but can also be used in a wide range of middle eastern meals, sauces, side dishes and deserts and of course Hummus, which I will eventually post a recipe for.

– Recipe –

Makes slightly over a cupful

1 cup Sesame Seeds

roughly 1/3 of a cup Virgin Olive Oil

1/2 a teaspoon Lemon Juice

  1. On a medium heat toast the Sesame Seeds till coloured but not browned or in anyway burned, chuck them away if you burn any.
  2. Grind to a powder in a pestle and mortar and then mix in the other two ingredients with a spoon. Store in a sterile jar with a little extra Olive Oil over the top to keep bacteria out.
