Egg Fried Rice, it’s easy.
This is to accompany Pedro’s Crispy Lemon Chicken recipe, or any other Asian/West Indian meals you may have, well, in fact, it’s just good with most things!
This is my very most basic simple Egg Fried Rice recipe, you can add lots of other vegetables, turn it into a stir fry, add strips of meat or do whatever you like with this, as long as you make it tasty. Everything in this is approximate, just add peas and sweetcorn till you think you have the right amount.
– Recipe –
– 500g Cold Rice (I generally always make more than I need so I have a bit to Egg Fry the next day)
– 3 tablespoons Soy Sauce
– 2 Eggs, stirred
- Get your cold Rice and pour some Soy in and then mix it a little so the grains are different shades from white to brown.
- Heat a pan/wok and fry the Eggs till slightly dry, keep breaking it into smaller pieces and stirring, reserve.
- Begin to heat the Rice in the same pan, add the Peas and Sweetcorn, cook till hot and then stir the Egg in. Stir fry 30 seconds and then it is ready to serve!
