All American Bacon-Fried-Corn!

This is a really good side for Southern American meals and BBQ’s, its kind of my own invention, but there’s lots of other side dishes like it (but not the same) to be found in the US, so its more my take on something well established than my own thing.

I used this as the side for the Shellfish and Yellow Pepper Gumbo recipe a few weeks back, it goes perfectly.

– Recipe –

1 Red Onion, chopped fine

2 cloves Garlic, chopped fine

3 slices Bacon, cut into strips

1 tablespoon Butter

1/2 tablespoon Sugar

400g Sweetcorn

2 tablespoons Chicken Seasoning (or substitute with Paprika and Parsley, not as good)

1/2 a can of Lager

juice of one Lime

Salt and Pepper, to taste

  1. Sauté the bacon with Onion and Garlic in the Butter and Sugar, occasionally adding small amounts of the Beer when it starts to dry slightly.
  2. When the Onion is translucent and slightly caramelised and the sweetcorn and Seasoning.
  3. Stir regularly, cooking for 10-15 minutes and adding Beer in small quantities.
  4. Let all the Beer absorb, squeeze the lime over the top and then serve.
